Recipe: Frozen Banana Popsicles
Summer is here, and the search is on for great-tasting, good-for-you snacks the whole family will enjoy. Frozen treats that just so happen to have a festive red, white and blue flair—well, that’s just a bonus! This recipe takes heart-healthy bananas and layers on antioxidant-rich dark chocolate, with a sprinkle of coconut to provide a surprising boost of more than a dozen essential vitamins and minerals.
Frozen Bananas Ingredients
- Medium, ripe bananas
- Coconut, enough for three small bowls
- Dark chocolate, about a cup
- Red and blue food coloring
Cut bananas in half lengthwise, then in half to make four quarters. Insert sticks, place on a wax paper-lined cookie sheet and freeze. Separate coconut into three small dishes. Add a few drops of red food coloring to dish one. Add a few drops of blue food coloring to dish two. Leave the third dish plain. Fill a mug with the dark chocolate. Melt chocolate in the microwave for 30 seconds at a time, stirring until the chocolate is melted and soft. Dip the banana into the chocolate and place it back on the cookie sheet, flat side down. Quickly add the coconut to the rounded side before the chocolate hardens (work quickly). Return to the freezer until frozen. Eat frozen and enjoy!
