Recipe Zucchini Noodle Salad

It’s zoodle season! (That’s zucchini noodle, in case you weren’t sure.) Zucchini squash is known for a variety of health benefits, like:

  • high amounts of water and electrolytes for extra hydration and digestive health
  • anti-aging, antioxidant and anti-inflammatory properties
  • lots of fiber to reduce blood sugar, lower cholesterol, and promote a healthy weight
  • potassium for blood pressure health and proper circulation
  • super-nutrients like lutein for eye health
  • vitamin C and plant compounds to improve thyroid and adrenal function

… plus, its mild flavor makes it easy to include in dishes your whole family will love!

Zucchini Noodle Salad

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons white balsamic vinegar
  • 1 tablespoon chopped fresh basil, plus more for garnish
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon each salt and pepper
  • 1 large zucchini
  • 1/2 cup fresh mozzarella balls
  • 1 cup halved cherry tomatoes
  • 1 firm ripe avocado, cubed

Whisk oil, vinegar, basil, garlic powder, salt and pepper in a large bowl to make a dressing. Using a spiral vegetable slicer, “spiralize” zucchini lengthwise into noodles. Add the zucchini noodles to the bowl with oil, vinegar, basil, garlic powder, salt and pepper. Add in mozzarella balls, cherry tomatoes and avocado. Toss to coat. Serve topped with more basil, if desired. Enjoy!
