Recipe: Avocado Bean Dip
Avocado bean dip.

 

BayCare Fitness Center’s Registered Dietitian Nutritionist, Genevieve, shares her secret recipe for avocado bean dip. It contains filling fibers, healthy fats and is full of flavor.

Ingredients

• 1 can cannellini beans, 15 oz., rinsed and drained 

• 1 avocado

• 2 cloves garlic

• 1/2 jalapeno, diced with seeds removed

• 1/4 cup fresh cilantro

• 2-3 tbsp fresh lime juice

• 1/8 tsp cumin, or more to taste

• Salt and pepper, to taste

Directions

• Place all ingredients in a food processor and process until smooth. Adjust seasoning to taste.

• Enjoy with whole grain tortilla chips, bell peppers, celery or jicama.

Yield

About 2.5 cups. Serves about 10, 1/4 cup servings
